  1. In a large frying pan, melt down the coconut oil and then fry the onion, red pepper, courgette and green beans for roughly 5 – 8 minutes. Once cooked, set to one side.
  2. Then fry the chicken (or if you have two suitable frying pans you can cook the chicken and veg simultaneously) in the tamari sauce until it is brown and cooked through.
  3. In a large separate bowl, mix together the eggs. Once well mixed, add in the spinach as well as the other cooked vegetables and chicken.
  4. Pour the mixture in to a deep, round baking dish and add in the cherry tomatoes (if you want them in) and bake for 20 minutes on 180C.
