  1. Place the chicken carcasses, garlic, bay leaves and peppercorns in a large, deep bottomed pan.
  2. Add the cold water and then bring to the boil, skim, then turn the heat down to simmer gently for 3-4 hours.
  3. Pass the stock through a fine sieve and allow to cool for half an hour before refridgerating.
  4. Once cold, it should look clear and slightly amber in colour.
  5. Divide in to small plastic containers and put it in to the freezer – this will keep frozen for 2-3 months.
