  1. In a food processor, place the garlic, ginger, cinnamon, half of the chopped onions, garam masala and water to form a paste.
  2. Heat 1.5-2 tsp of coconut oil in a deep, large pan, with the remaining onions and fry them until softened and light brown in colour. When done, remove the onions and set them to one side.
  3. Add the remaining coconut oil in to the pan to melt, adding in the lamb and cooking thoroughly until brown. When done, remove the lamb from the pan and set to one side.
  4. Place the spiced onion paste in to the pan and cook it for approximately 3 minutes.
  5. Stir in to the cooking paste the lamb and the yoghurt.
  6. Add in the stock, cover and allow to simmer on a medium to low heat for 40 minutes.
  7. Add in the remaining onions, re-cover and cook for a further 5 minutes.
  8. Garnish with fresh coriander and serve with a plate of green vegetables and a small portion of white rice.
